Summary Consumer theory provides a framework from which to offer an empirical representation of consumer behavior. The study of these behaviors is interesting in itself. It also offers a set of tools to understand the effects of public policies. This thesis aims to contribute to the study of consumption behaviors, and to propose some applications. The first chapter deals with the problem of measuring price effects when the quantities consumed are not recorded in surveys. The second chapter studies indirect taxation in a behavioral framework using a new microsimulation model. Finally, the third chapter of this thesis is devoted to the contribution of the panel structure for consumption surveys, where we identify consumption laws on a very fine nomenclature by building a pseudo-panel from time-less data.
