Summary Even if this trend is not new, the COVID-19 crisis has encouraged the development of more responsible food purchases (local, organic, fair trade, without packaging, etc.). Organic products are among the big winners of this evolution in consumption (+15% of new organic consumers in 1 year), especially among young people who mention environmental protection as a key to organic consumption. The organic production method is often cited as an example of sustainable or agro-ecological production.
